dc.description.abstractPotatoes are a Popular food worldwide, valued for their nutritional benefits and increasing demand. As one of the top five global food crops, Bangladesh ranks among the leading producers in terms of cultivation area. Traditional potato processing comprising washing, peeling, dicing, and manual, particularly in large-scale settings like restaurants. This approach is labor-intensive, time-consuming, and poses risks of hand injuries. To improve efficiency and safety, a portable potato slicer has been developed. This innovative slicer utilizes a geared motor for power transmission via a chain drive, featuring three primary components: the potato feeding structure, the conveying structure, and the slicing execution structure. Potatoes are fed into the machine, conveyed through a belt sliced using a motor-driven mechanism that applies pressure to the holder. The sliced chips are then expelled through a deflector. Finite element analysis was conducted using SolidWorks Simulation to assess the mechanical integrity of critical components, including the slice shaft and tool holder. Results showed minimal deformation under operational conditions, confirming that strength and stiffness meet design specifications. Powered by a 1200W motor, the slicer allows for holders to achieve various slice thicknesses. This research enhances understanding of the potato slicer’s mechanical structure and operational principles, paving the way for improved processing efficiency in food preparation.en_US
